Boutique winery a befitting feature for 5-course wine dinner

San Francisco winery selected for a fall pairing
As part of its monthly lineup of featured tastings and events, The Iron Horse Hotel will spotlight a boutique winery for a Smyth wine dinner. On Thursday, Nov. 10, distinctive wines from JAQK Cellars will accompany five mouth-watering food courses prepared by renowned chef Jason Gorman.
The limited-production San Francisco boutique winery JAQK Cellars was chosen for the evening, in part because its founder Joel Templin is a Wisconsin native. Templin says his winery’s mission is to create incredible wine with a side of play.
The Iron Horse Hotel owner Tim Dixon was particularly impressed with the
company’s unique branding, “They’re a perfect fit for the fun loving and
hardworking vibe of the hotel.”
The menu: Passed: Charmed Sauvignon Blanc 2009
1st Course: Butter Poached Rock Shrimp, vanilla risotto, and celery leave salad paired with Her Majesty Chardonnay 2008
2nd Course: Duck Confit Salad with Marcona almonds, Pleasant Ridge Reserve,
Sweet Water greens and tangerines, served with Soldier of Fortune Syrah 2007
3rd Course: Slow-Braised Pork Shank with dates, pearled barley and wood fired onion sauce, paired with Bone Dance Merlot 2007
4th Course: Red Deer Venison Leg, cherry wood bacon kugela, braised greens
and black pepper oil, accompanied by 22 Black Cabernet Sauvignon

5th Course: Blue Mont Cave Aged Bandaged Cheddar with Quince preserves
