Hello December! Not only is this the month to decorate and give gifts, but it’s also the month to bake cookies. Every year I bake an assortment of desserts and make candy to give as gifts. This year I decided to bake old time favorites like pecan sandies, star butter cookies and a gingerbread house.
Because I love you guys Of course I am going to share the recipe with you. I will also post the step-by-step video and I wish you could smell and taste these delicious cookies, so you must make them soon.
I decided to use a recipe from Ina Garten, one of my favorite cooks. Her recipes always come out perfectly and I do not have to tweak them at all. The cookies are sweet, buttery, and tasty, and rolling them in powdered sugar gives them a nice delicate flavor.
After decorating the home for the holidays, the next step should be to bake some cookies, pies, or bread. It feels like the house gives you a big hug after and if you have family living with you, the hugs, praises, and kisses will not cease. So, without further ado, here is the easiest and best cookie recipe I have made so far.
Ina Garten’s Pecan Sandies
1 cup butter
½ cup brown sugar
¼ cup granulated sugar
2 cups all-purpose flour
1 ½ – 2 cups pecans, coarsely chopped
2 tsp vanilla extract
¼ tsp salt
Instructions
- Cream together the butter and sugars
- Mix in the vanilla. Stir in the flour, salt, and then the pecans.
- chill for 20 minutes. Roll into 1 ½ inch balls (I used a cookie scoop instead), wet the bottom of a glass cup and gently flatten the cookie.
- bake at 350 degrees for 15 – 17 minutes
*(optional) when done roll in powdered sugar
The cookies can be packaged in an airtight container to stay fresh.
