Today is Halloween and if you have small children, yesterday you probably took them out to some sort of event that handed out candy. I do not celebrate Halloween anymore, but I am aware how getting a gigantic bag of free candy is a big deal. I also tend to enjoy the leftover candy the parents bring to the workplace afterwards.
Halloween is also all about the costumes and I remember growing up and every year wearing my Wonder Woman costume until I outgrew it. I also remember going house to house for hours in the sun and the rain just to get some loot.
Things have changed a lot since those days and now I opt to stay home and make my own treats, because I love a good piece of chocolate. My favorite candy combo includes chocolate, nuts and or caramel. Not everyone is able to or allowed to go out trick or treating anymore, so I am going to share with you my favorite candy recipe, so you can make it at home.
It is super easy, has only a few ingredients and is a kid friendly recipe! My tasty, quick,and easy turtle recipe will surely be a crowd pleaser and your guests will think you slaved over a hot pot of chocolate for hours. These turtles can be stored in an airtight container for as long as there are leftovers, and you can also wrap them in a cute little gift box for that special someone.
Without further ado, here is the easiest recipe on the planet for a delicious treat.
Nikki’s Tasty Turtles
½ of a 12 oz bag semi-sweet chocolate chips (or milk chocolate chips)
1 bag of individually wrapped caramels (or the unwrapped caramel bits)
Large bag of Pecan halves
2 tsps. of coconut oil (melted)
1 can of spray oil (any kind)
1 tablespoon of water
Place a sheet of wax paper or parchment paper on a large plate or cookie sheet. Spray a sheet of paper towel with some oil and gently wipe it across the top of the paper. Place ¼ cup of pecans on a pan or plate in a circular position. Open the whole bag of caramels and place in a bowl and add 1 tablespoon of water and melt in 10-15 second intervals until melted. Spoon caramel on each mound of pecans, reheat if necessary. Melt a tsp of coconut oil in a small bowl and set aside. Melt the chocolate chips in a small bowl in 10 second intervals until melted and add in the coconut oil. Spoon the chocolate on top of the caramel pecans. Refrigerate until they are hard. Makes 12 large turtles of 24 small ones.
