Mother’s Day is approaching so I am going to share with you a fantastic way to celebrate this special day. Going out to dinner or anywhere on Mother’s Day can be a hassle and sometimes by the time the food arrives it is less than perfect. This year instead of going out to dinner treat your mother to her very own brunch buffet.
While getting ideas together for this article I thought of my cousin Val (Varyl). Growing up she took me under her wing and taught me many things and cooking great meals was one of them. What I loved about her cooking was that she made everything from scratch, and she was diverse in her cooking. As an added treat I am going to share with you one of her delicious recipes, Cucumber Sandwiches.
To set up the buffet you will need a 6 ft long table, a linen tablecloth, and a table skirt. After the table is set, place your plates, napkins, and silverware in the left corner and then set out the bread and crackers. Choose an assortment of bread like hard rolls and croissants, and a variety of flavored crackers. Then place small containers of butter, cream cheeses, and preserves in front of them. Also, be creative and put flowers or confetti on the table to add a special touch.
Next set out the meat, like Bacon, sausage, and chicken and you can also place the meat in chafers to keep warm. Next to the meat selections set up a hot plate so you can make made to order eggs and omelets. In front of the hot plate place mini bowls of spinach, cheese, and onion. Towards the end of the table set up the cold items like fresh fruit, a bowl of melted chocolate and fruit dip, then fresh vegetables with spinach dip and ranch dip.
As promised, to make your Mother’s Day brunch extra special here is the recipe for my cousin Val’s Cucumber Sandwiches:
- 4 ounces cream cheese
- ¼ cup mayonnaise
- ½ pkg dry Italian dressing
- Dill weed
- French bread
- Cucumber
Slice the French bread. Combine cream cheese, mayonnaise, and dressing. Spread on bread. Top with a thin Cucumber slice and sprinkle with dill.
