Each season has its own favorite things to enjoy and for the Spring I love fresh light recipes. One of my favorites is an Icebox pie. These pies are super easy to make and there is no baking needed. Another reward is the ingredient list is small and most of the items can be bought ready to use.
They are called Icebox pies because they only need to be put in the refrigerator to set. These pies are delicious and mostly have some type of fruit flavor. They are also versatile for potlucks, family gatherings or just to enjoy at home.
Some popular Icebox Pie flavors for Spring are lemon, pina colada, lime, strawberry and even chocolate. You can also make a whipped cream topping, although not needed. Later this season I am going to share with you another variation of an Icebox Pie that will shock you, but it is incredibly good.
Before I share the recipe, I wanted to give you a few variations that you can try when you make your Icebox Pie.
The crust: I used graham cracker crust, but you can use a pretzel crust, and Oreo crust, or a Shortbread crust.
The flavor/fruit: I used bottled lemon juice; however, you can use fresh squeezed lemon juice or even lime juice. Bottled or freshly squeezed, it will still yield the same result. You can also mix in some added fruit by folding it into the filling.
The filling: I added a tub of cool whip to make a fluffy filling, but if you like a dense pie, skip the cool whip. Adding the cool whip also stretches the filling, so you can buy a bigger crust or get some of the mini pie crusts for the additional filling.

Lemon Icebox Pie
For the filling:
1 – 8oz pack of cream cheese
1 – 14 oz can of sweetened condensed milk
½ cup of lemon juice
1 – 8oz tub of Cool whip
For the top:
½ cup cold milk
1 pack of dream whip
1 tsp vanilla flavor
Mix softened cream cheese, condensed milk, and lemon juice in a bowl until smooth. Fold in a tub of Cool whip and pour into prepared pie crust. Put the pie in the fridge until you make the whipped cream.
In a separate bowl blend all ingredients for the whipped topping for about 4 minutes and top pie. Put the pie back in the fridge until it is chilled for about 8 hours or overnight.
