We are in the last days of summer, and there are still a few gems out there, so move quickly, because this is the last call for roasted corn, BBQ, and scary fun rides. After this month you can retire your shades, sunscreen, and walking shoes and enjoy the early sunset now.
With the state fair ending this weekend, I thought about the cream puffs and the blue-ribbon pie contests that most state fairs have, and I immediately thought about my aunt Libbie, who is not only a great cook, but she makes the best pies. She makes everything from scratch, and all her dishes are delicious. This spring she made a fruity cheese delight pie and I got her permission to share the recipe with you guys today, later in the story.
Here are the last few events of this season, The MKE Black Theatre Festival August 10th – 14, this celebration of Black arts and culture features spoken word, dance performances and an R&B and Gospel concert, which I am sure is going to be a blast. As promised, if you are not able to attend any of these events, feel free to make and enjoy this fruity cheese delight pie, I am sure you will have an enjoyable time devouring it, like I did.
Libbie’s Fruity Cheese delight Pie
1 – 8oz (softened) Philadelphia cream cheese (per pie)
1 cup powdered sugar
1-TB spoon orange zest
1-TB spoon vanilla flavor
¼ cup of freshly squeezed lemon juice (no pulp)
1- Graham cracker crust
2-cans of ready whip / or cool whip
½ cup fresh pineapple
½ cup freshly cut bananas
½ cup freshly halved/sliced strawberries
½ cup fresh if not seasonal canned (drained) peaches
Mix – cream cheese, vanilla flavor, lemon juice, sugar, and orange zest together until creamy consistency, then carefully (fold 1 of the 8oz) of cool whip into mixture. Spoon into crust. Refrigerate for 2 or more hours, preferably overnight because fruit moistens pie and needs to be firm. After cheesecake is firm apply all fruit on top, then top fruit with remaining 8 ozcool whip. Optional … garnish w/mint leaf, or thin slice of fruit. Chill at least 1 hour before serving.
